1 each Sweet Potatoes
0.2 pint Cherry Tomato
1 Kohlrabi organic
2 Tbs Caper Vinegarette
Step 1: Heat oven to 400f.
Step 2: Veggie Prep: Peel and cut your sweet potatoes into thin wedges. Peel and cut your kohlrabi, you can
spiralize it if you have the tools to or you can cut the round in half, then cut it in thin half moon slices.
Step 3: Toss the prepped veggies, cherry tomatoes, and caper vinegrette together. Put in a shallow baking dish and roast in
oven for 30-40 minutes. Enjoy!
