4 Garlic Cloves
Ginger, Fresh 5cm piece
6 cup vegetable stock
Star Anise 2 full stars
2 Tbs Soy Sauce
50 g oyster mushroom
100 g rice noodles
300 g bok choy
1 Tbs Sesame seeds, white
1 Tbs Sesame Oil
Veg Prep: Peel and small dice the onion. Peel & Mince the garlic and ginger. Tear apart oyster
mushrooms. Tear bok choy leaves off and discard the butt. Prepare your stock.
Heat 2 TB olive oil in a medium stock pot over medium heat. Add the onions and cook till translucent
and softened. Add the minced garlic and ginger. Continue cooking for another 2-3 minutes.
Pour the stock in the pot and bring to a boil. Turn down heat, add soysauce, sesame oil & anise mixture and
continue simmering for 12 minutes with the lid on.
Take lid off and make sure to remove the full star anise seeds.
Add the mushrooms, noodles, and bok choy and cook for 8-10 minutes or until noodles and bok choy are
soft and cooked.
Garnish with sesame seeds.
