1 lb Carrots
6 cup vegetable stock
4 g Garlic #2 Clove
1 teaspoon Harissa
2 Tbs Olive oil
1 Medium Onion
1 Tbs Organic Apple Cider Vinegar
½ tsp Cumin (Ground)
2 tsp Salt
Step 1: Prepare stock and bring to a simmer.
Step 2: Veg Prep - Peel and cut your carrots into bite sized chunks. Peel and cut your onion in similar sized chucks. Peel and
dice your Garlic.
Step 3: In a large stock pot heat up oil. Add onions. Cook for 5 minutes, stirring every now and again till some colour starts
to happen and the onion becomes a bit soft. Add carrots, stir, and continue cooking for another 4 minutes to get some colour
on the carrots. Add Garlic, cook another minute.
Step 4: Add Cider/Harissa/Cumin Mixture and deglaze your pot. Add the stock.
Step 5: Simmer all together, stirring now and again, for 20 minutes or until your carrots are soft and tender.
Step 5: Blend all together.
Step 6: Put mixture back in pot and cook for another 10 minutes for it to become a beautiful consistency. Serve!
