1 each Tomato
1 cup Cucumber 1
2 g Green Onions
3 Tbs Pistachios
20 g Dill, Fresh
20 g Basil
20 g Parsley
100 g Zucchini 1 small
1 cup Bread crumbs
¼ cup Walnuts
4 each eggs (Not inc.)
1 tsp Salt
1 Tbs garam masala spice
Cut your tomatoes and cucumber into bite sized wedges. Thinly dice your green onion. Toss all
together with your rose blossom salad dressing and top with pistachios. Leave for flavours to meld
while you prepare your green goddess fritters.
Shred your zucchini with a large grater. Finely chop all of your herbs.
Place the zucchini and all of your herbs, the breadcrumbs, crushed walnuts, eggs, spice blend, and
salt in a bowl and mix thoroughly.
Heat up your oil in a frying pan over medium high heat. Scoop large spoonfuls into the hot frying
pan. You'll be able to fit 3-4 fritters on the pan depending on size. Fry for 2 minutes on each
side, till crispy and gorgeous. Transfer the cooked fritters to a paper towel lined plate and
continue cooking till all the batter is used up.
